Chilled Soba
Cold Japanese buckwheat noodles.

In Japan noodles are part of the main staple. They are served hot or cold, in the school canteen and in back alleys but they are never considered a delicatessen. But they sure are good. These noodles are served cold and are one of our favorites. You can enjoy them year round but they are especially suitable in the summer. A gentle reminder, Wasabi, the green Japanese horseradish, is extremely hot so be careful.

Ingredients and preparation

For 1 portion you need:
100g dried buckwheat noodles

Sauce
0,5 dl Japanese soy sauce
0,5 dl sake rice wine
0,5 dl sugar
1 dl dashi
1/2 tsp mixed wasabi

Garnish
3-4 slices of peeled Lotus root
1/2 chopped spring onion
10 strips nori cut thin
2 slices carrot

>> Boil the noodles until "al dente". Rinse in cold water and drain.

>> Mix the soy sauce, sake and sugar. Pour 1 dl of the mixture over the Lotus root and let marinate for at least 30 minutes.

>> Mix the dashi and wasabi with the rest of the mixture.

>> Place the noodles in a deep bowl. Pour over the Wasabi sauce. Garnish with spring onions, thinly sliced nori, carrot slices and marinated lotus root.
